James Fun To Do

When traveling around the universe in a giant peach with life-size anthropomorphic bugs, one can find themselves in need of a snack. Enjoy making and eating this peach parfait with some special kids and at the same time, cook up some Dahl-like adventure in your minds. Have fun letting each participant string together different parts of the tall tale.

Ingredients:

• 1 cup vanilla yogurt
• 2 small peaches, pitted, peeled, and diced
• 2 teaspoons honey
• 1/8 teaspoon cinnamon
• 8 graham crackers, crushed

Preparation:

In a bowl, mix together the yogurt, peaches, honey, and cinnamon. Cover and refrigerate to chill thoroughly.

To serve, prepare 4 parfait glasses. Into each parfait glass alternate layers of yogurt mixture with graham cracker crumbs, beginning with yogurt and ending with crumbs. Serves 4.

I'm from Atlanta, Georgia, so peaches were an everyday part of my existence. Adventure was not. I was the kid who was scared to go down the twisty slide; scared to try new food, scared of actual caterpillars, let alone life-size caterpillars!
