Would my kids eat them or be freaked out by the green color? All my worries were erased when I tasted them. They are moist and delicious and you can't taste the spinach at all. My veggie averse kids loved them and request them all the time."

Spinach muffins

Ingredients to make 15 muffins: 3/4 cup of pureed spinach, 1 tsp vanilla, 2 eggs, 1/4 cup of oil, 1/2 cup of applesauce, 2 cups of flour, 3/4 cup of sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp of salt

DCT Mom thoughts

Here I am as Mrs. Pinkerton from the DCT production of "Pinkalicious" in 2013 (with the actors playing Mr. Pinkerton and Peter) and my own nieces and nephew. As a "stage mom" and a real mom, I know that a balanced diet is best for our kids, but that can be difficult to enforce when you have busy schedules. I always look at the colors on the plate with each meal. Is everything all one color? If the plate looks too monochromatic, I'll quickly grab some raw veggies or fruit to add to their serving. My kids seem more receptive to eating their full meal if there is variety of color; an artist's palette of hues on their plates.
